Ingredients: Organic Cacao Beans, Organic Cocoa Butter, Organic Sugar.
Appearance: 10-block plain pre-broken mold and darker brown than expected considering the low percentage; this bar appears almost unaffected by heat.
Aroma: very strong bright red fruit and dried apricot with sweet nutty undertones; very little overt cocoa.
Melt & Snap: beautiful melt & good snap.
Flavor: bright fruits and some acid and then deep chocolate and a smooth woodiness; it has a ganache-like consistency in an eighty degree-room, although in any place you would find it bitterless & pleasant. The finish is nutty.
Complaints & Complements: stupendous flavor changes and absolutely without bitterness or tannins— a feat in this industry. I like it a lot, but wish it were a higher percentage, though cost may have understandably been a factor if these are Peruvian criollo beans.
