Ingredients: Cacao Beans, Organic Cane Sugar, Cocoa Butter.
Appearance: medium deep brown with a light fat bloom, presumably because it melted a bit in transit. The design emerging from the mold reminds me of a Moroccan rug.
Aroma: sweet, woody cocoa.
Melt & Snap: good melt & strong snap.
Flavor: sweet fruitiness, and then caramel and light bitterness, intensifying into a sweet, short cocoa finish. Not at all what I expected from the nose.
Complaints & Complements: I was impressed by this bar. From the aroma I had painted an entirely different flavor path in my mind. But the nuttiness only emerges after several bites, and there’s anways an undercurrent of bittersweet cocoa. The flavors are quite sharp. The packaging is nice, but I wish it were easier to re-seal.
