Ingredients: Certified Organic Cacao Beans, Raw Sugar, Certified Organic Cocoa Butter, Chardonnay Oak Smoked Sea Salt.
Appearance: deep blue rectangular packaging with the heavyhanded “BRASSTOWN” printed across the front and a blacked-out bottom underlining a boat in shadow. The sticker holding the back together is a compass, a motif which continues inside. The bar itself is well-tempered, a very dark brown with compass roses & rectangles repeatedly covering the area outside of where the name is.
Aroma: earthy cocoa, minerality, and vague fruitiness.
Melt & Snap: hard melt & hard snap.
Flavor: sweet saltiness hits first, then sweet cocoa and some caramel that I didn’t sense on the nose. Light tannins on a short, sweet finish.
Complaints & Complements: the tannins at the end may be a little deterring, but make no mistake; the climax of this bar is a burst of salted caramel in that middle that will definitely entice you into another bite. Note that the salt isn’t sprinkled onto the back of this bar, but added directly into the chocolate. I’d have loved to be in the test group for that comparison: salt on top vs. salt on the back!
