Bar: Dark 50% (blend)
Maker: F%nderia Del Cacao (Tuscany, Italy)
Price: ~$11/50g (Osaka Salon du Chocolat)
Munch Factor: 3/10
Ingredients: organic cane sugar, organic cacao, organic cocoa butter, soy lecithin.
Appearance: their whole line of bars has a white background with different colors and percentages of cacao, this one being brown. The plain paper packaging and platic inner wrapper strikes me as cheap on an aesthetic level, but efficient. The bar itself has a medium dark brown color, darker than expected for such a low percentage, and a plain blocked mold.
Aroma: some sweet red fruits with ground coffee undertones; a little earthy, but straight forward
Melt & Snap: good melt & okay snap.
Flavor: cocoa, and then a sort of dustiness that melts into a diluted fudge flavor with an uncomfortably long finish. Where did the flavor go in this bar?!
Complaints & Complements: I can’t recall if I’ve ever tried such a low percentage dark, but I was excited to taste the reasoning behind it. Instead I was disappointed. It seems obvious to me that this bar was created just to round out their line-up of percentages. The flavor of this bar felt like it was hiding in a corner behind piles of sugar, and the worst part is, it wasn’t even overly sweet.
Context: sitting in my warm office before lunch, AC freshly turned off.
