Ingredients: Organic Cacao, Organic Cocoa Butter, Organic Cane Sugar, Sea Salt.
Appearance: 24-block pre-broken mold with the maker’s stylized name on each rectangle; very dark brown in color.
Aroma: woody dark red salinity with pleasant but sweetly intense butter undertones.
Melt & Snap: beautiful melt & good snap.
Flavor: strong salt no matter the side you start on, and then dark red fruits and some acidity, pairing well with the salt; finish is moderate and somewhat bitter.
Complaints & Complements: there is only minor evidence of melting in transit, itself a minor miracle. But it almost seemed like the salt was trying to cover up the acidity in the chocolate, because it was very strong, though it paired nicely.
Context: midnight in a very warm hostel in Belize.
