Ingredients: Cacao Beans, Sugar, Pine Nuts.
Appearance: a very dark brown traditionally-molded bar of, I’d guess, about 28g. It’s cute, and well-tempered.
Aroma: very nutty on the nose, and if I didn’t know any better, I’d have said it reminds me of fatty cocoa-dusted almonds.
Melt & Snap: beautiful melt & soft snap.
Flavor: nuttiness, and then slight bitterness quickly covered by fattiness, cooling and sweet; it reminds me of a pine nut guianduja. Not overly sweet, and a long, buttery finish. Simple, yummy flavor.
Complaints & Complements: pine nuts (잣) are famous in this country, and prized throughout Korea, despite the price. Hocada Coco just started making chocolate in February of this year, in their workshop in the Korean mountains. The owner chose to include pine nuts for their buttery, healthy properties and the importance they have in Hongcheon.
