Bar: Supreme Dark Chocolate 74%

Ingredients: organic cacao beans and organic sugar.
Appearance: I’m not sure why, but this bar screams gimmicky to me. Maybe it’s the use of the word “fancy”? The bottom is a 70’s wall paper pattern with the 74 (representing the percentage) written larger than the brand name, and lots of white space. The bar itself is a plain dark brown with nice temper in a 12-block mold.
Aroma: sweet, like a fruity caramel, with smooth cocoa undertones.
Melt & Snap: beautiful melt & nice snap.
Flavor: straight unsweetened cocoa, then brownie and finally some earthiness with a clumpy and overly-smooth melt. Not bitter or overly sweet at all; finish is short and straight-forwardly chocolatey.
Complaints & Complements: the very strange melt (probably sticky due to over-refining) needs work, but the bar itself is quite enjoyable. It reminds me immensely of Pralus’s Ghana 75%, though the texture is different.
