Bar: Salt & Nibs 60%
Maker: Pacari (Quito, Ecuador)
Price: $3/50g (Direct From Retailer)
Overall Rating: 6.5/10
Munch Factor: 7/10
Ingredients: Organic Cacao Paste, Organic Cane Sugar, Organic Cacao Butter, Cacao Nibs, Organic Salt, Sunflower Lecithin
Appearance: 18-block mold, fairly plain, with a dark brown color reminiscent of coffee beans, and bits of salt & nibs made obvious once broken.
Aroma: Salt like a sea breeze, with distant notes of earthy cocoa.
Melt & Snap: Hard melt & very strong snap.
Flavor: A slight bitterness, and then straight cocoa cut only by the salinity of the salt melting with the emerging sweetness. It tastes more like a confection than an artisan chocolate bar.
Complaints & Complements: One basically has to chew the bar constantly, due to the pointed crunchiness of the salt and nibs. It’s a pleasant bar, but in the end, it just kind of tastes like all the other Pacari bars.
