*Pralus Fortissima 80%

Sharing is caring!

Bar: Fortissima 80% (blend)
Maker: Pralus Chocolate (Paris, France)
Price: $8/100g (Caputo’s Online Shop)
Overall Rating: 7.5/10
Munch Factor: 4/10
Ingredients: Cacao Beans, Sugar, Cocoa Butter.

Appearance: moderate dark brown color, almost the exact same shade as the packaging; blocked pre-broken mold with Pralus’s signature in the larger bottom square. Nice temper.
Aroma: woody, but bright, like old figs, with woody undertones.
Melt & Snap: good melt & nice snap.
Flavor: cocoa powder flavor breaks first, and then light bitterness is felt directly on the tongue. It’s like eating roasted cacao nibs without the acidity, until sweetness comes in and it turns fruity. Sweet, brownie finish.
Complaints & Complements: this is a very pleasant, non-offensive bar. I would buy it again, but particularly for a friend who’s usually more inclined towards chocolate desserts than towards chocolate bars.
Context: sitting in my office first thing in the morning.
