Bar: Ecuador 85% (Hacienda Limon)
Maker: Pump Street Bakery (Orford, England)
Price: $10/70g (Caputo’s Market online store)
Munch Factor: 3/10
Ingredients: Cacao Beans, Cane Sugar, Organic Cocoa Butter.
Appearance: plain blocked molded very dark chocolate, scuffed but nicely tempered inside. The packaging is much more aesthetically appealing than the bar itself.
Aroma: dusty mushroom and earthiness, with the faintest of red fruit undertones.
Melt & Snap: okay melt & hard snap.
Flavor: first is a hit of acid you can feel, and then deep unsweetened cacao tones which morph into chocolate, still blatantly lacking sweetness until you recognize the flavor of brownie batter. Some bitterness messes with you on the long finish, but the cocoa stays.
Complaints & Complements: as I always remark with Pump Street bars, the packaging is attractive and functional; their chocolate has not yet disappointed, either. It’s a true dark chocolate lover’s bar, and the only meh part was the touch of bitterness at the end, but that’s not enough to wipe away the brownie batter memories.
Context: sitting in my apartment before dinner.
