Ingredients: Organic Fair Trade Cane Sugar, Organic Fair Trade Cacao Beans, Organic Fair Trade Cacao Butter, Organic Milk Powder, Organic Lemon Essential Oil, Organic Fair Trade Ground Vanilla Bean.

Appearance: like all Theo bars, this one is rectangular with the circular Theo cacao pod logo at the top and center. There are lemon slices and yellow flowers covering the front, and basic info on the back. It’s in an 8-block pre-broken mold with the same Theo logo on each piece. Nice temper and medium brown color with tiny flecks of vanilla on the back.
Aroma: lemon shortbread or lemon meringue; no cocoa whatsoever.
Melt & Snap: beautiful melt & soft snap.
Flavor: muted lemon creeps in from the get, with sweetness and finally a bit of dusty cocoa near the end. Moderate, sweet finish.
Complaints & Complements: note first that this is a limited edition bar from their spring collection, though it’s likely to make a re-appearance next year. That said, this is a fine eating chocolate for those with a strong sweet tooth. It has a very light lemon flavor that plays over the milk chocolate while somehow still managing to obscure almost all cocoa notes.
