Appearance: Beautiful delicate feather mold; dark brown color with nice temper.
Aroma: Sweet dried red fruits; very pleasant.
Melt & Snap: okay melt & good snap.
Flavor: Bright sweet fruits, texture and smooth bitterness fades to sweet cocoa with a bit of dryness. Short acid on the finish.
Complaints & Complements: I am biased towards Madagascan origins because I adore the sweet red fruits that tend to feature in the cacao, but this is a great example of quality African cacao; get some honey notes in there and it could not be beat.
