Maker: Amedei (Pisa, Italy)

Ingredients: Cocoa Mass, Cane Sugar, Cocoa Butter, Vanilla.
Appearance: small blocked mold with “Amedei” printed on the front and lines bisecting the bar. Very dark brown for a 63% dark bar. Beautiful temper.
Aroma: earthy with big chocolate (especially after I stuck it in front of the heater for 30 seconds— before, I got nothing).
Melt & Snap: hard melt & very strong snap (even so post-heater).
Flavor: cocoa taste starts slowly and then envelops your whole mouth in a brownies with nuts flavor which sweetens & then finishes fast.
Complaints & Complements: this bar is really straight-forward and chocolatey, but that’s sort of my problem. It is well-made and I liked it, but it lacks the complexity I look for in bars. The word that comes to mind is mono-tonal. Hopefully I can try more of their single-origin bars in the future, to understand more about this established Italian maker.
