Appearance: wrapped in black paper with silver lettering, this bar is not the most eye-catching, but it definitely reflects the strong flavors held inside. The bar itself has the stylized BV logo in the center with sweeping pre-cut indentations; its a very light brown color for a 100% bar.
Aroma: sweet & creamy red fruits with deep cocoa and sort of spicy undertones.
Melt & Snap: beautiful melt & strong snap.
Flavor: dark cocoa with a near soul-sucking lack of sugar, then jujube (대추) flavor coming up from underneath to vie for dominance. The light tannins are easily overlooked by the lack of bitterness and short, savoury finish. Overall quite satisfying.
Complaints & Complements: this bar is actually limited edition and made with a small batch of beans from a single region in Vietnam. All of Belvie’s bars are made in Vietnam with Vietnamese cacao, but their regular line-up is 70% bars skewed towards a more mainstream audience and generally more palateable. But for a 100% bar, this is quite good. It would do wonderfully at a wine tasting, in particular, with all the dried fruit notes.
