Appearance: Pre-broken mold with pipes connecting each block in a cute way; big nibs coat the entire back.
Aroma: Dried red fruits & earthy cocoa.
Melt & Snap: okay melt & okay snap.
Flavor: Dark red fruits musk up, and then in comes cocoa sweetness, melting into some rather strong acid, likely coming from the nibs. The finish is so short that I almost forgot I had eaten chocolate.
Complaints & Complements: I’ve probably been in Latin America too long, since in my head I had been pronouncing the name of this company like “say-oh,” as if it were a Spanish wird, instead of the Cello it clearly refers to. The fruit in the bar itself is crazy-strong, almost making me wonder if they did battle with not-fully dried cacao, that crazy-acidic stuff… but, at least I can say that if they did, they won.
