Ingredients: Organic Cacao Beans, Organic Cocoa Butter, Organic Sugar.
Appearance: A beautiful light brown color which surprises me considering the percentage; it is a 15-block pre-broken mold which is nice, but which fails to impress.
Aroma: Really strong smoked fruit, straight up.
Melt & Snap: beautiful melt & good snap.
Flavor: Earthy, then sweet cocoa and light fruits; chocolate mousse with berries and cream. Finish is long and sweet. I’m appalled that they added soy to this Criollo cacao, though.
Complaints & Complements: Holy crap. Sometimes I think I’m judging bars too harshly for their lack of flavor evolution, but a bar like this reminds me how chocolate should be. There are clear changes and all are pleasant ones, with the only points off for the dull snap and the smokiness on the nose.
Context: Sitting in my warm apartment in Mexico after a storm, so it’s not too cool.
