Ingredients: Cacao Beans, Cane Sugar and Cocoa Butter.
Appearance: Very light brown for the high percentage; plain mold.
Aroma: Sweet and dark with stewed red fruit undertones and a strange dustiness.
Melt & Snap: okay melt & good snap.
Flavor: Earthy sweetness then gets dry and smoky; very tanniny at the finish. It gets more tanniny the more you eat of it, though you don’t lose the fudgey flavor.
Complaints & Complements: I tried some Ecuadorean bars by this maker a couple of years ago, when they were first starting out and were at the NW Chocolate Festival in Seattle, and I am still not impressed. They have good intentions, but they still need to do some work.
